This centuries-old bakery on the corner of Campo de' Fiori turns out what many Romans consider the city's best pizza bianca — an impossibly light, olive-oil-crisp flatbread sold by weight. The queue at lunchtime snakes out the door as office workers and market vendors grab slabs of pizza rossa (tomato) and thick-cut sandwiches stuffed with mortadella or porchetta. The focaccia variations change daily. It's a standing-up, napkin-on-your-shirt kind of place, and that's exactly the point.
